Omelette Curry

Indians have a knack of Indianising anything that they like in another culture. Check out the omelette curry!

Serves: 4 


Ingredients :

3 omelettes, made of 3 large eggs
2 onions, chopped
2 cloves of garlic
2 red chillies
1 small tomato, chopped
A small bunch of coriander, chopped
½ inch piece of ginger, grated
4 tsp of coriander seeds
2 tsp of cumin seeds
2 sticks of cinnamon
4 tbsp of cooking oil
2 bay leaves
Salt - to taste


Method : 

Fry the red chillies, coriander seeds, cumin seeds and cinnamon. Stir for a minute and then add the onion and ginger. Stir again till the onion turns pink. Add the tomato. Stir until the mixture leaves the sides of the frying pan. Add the bay leaves. Pour a cup of warm water into the pan. When it boils, lower the heat and let the mixture simmer till the curry becomes thick. Cut each omelette into three pieces and place them in a shallow serving dish. Pour the hot curry over them and cover for five minutes.

Before serving, garnish with chopped coriander leaves.
