Koat Pitha or Banana Pitha

Koat Pitha is a special sweet dish, made of banana, jaggery and rice flour from Assam, India.

Serves: 4

Ingredients :
6 ripe bananas, mashed
1 cup grated jaggery
1 cup rice flour, sieved
250 gram of oil or vanaspati

Method : 
Mix the jaggery and the mashed bananas. Fold the rice flour gradually into the banana-jaggery mixture. Heat the oil and spoon the batter into the hot oil on medium heat. When the pithas turn golden brown, take them out of the oil. Place them on paper to drain out the excess oil.
