Wherever you may go in India, you will find food that makes eating an experience in itself.
2 cups of rice, cleaned and washed
6 green chillies, finely sliced
1 small onion, chopped
2 bananas, peeled and diced
2 tbsp of desiccated coconut
2 tsp of sugar
½ tsp of salt
2 tbsp of lemon juice
4 tbsp of cooking oil
Cook the rice till soft and tender. Drain it in a strainer under running water. Return to pan with a little oil to keep the grains separate. Mix the green chillies, onion, bananas, coconut, sugar, salt and lemon juice in a large bowl. Stir in the cooked rice gradually into the banana mixture, taking care not to mash the bananas.
Garnish with chopped coriander leaves.
